摘要
以天然材料为基础的可食性涂层为延长果蔬的贮存期提供了有效途径。单一材料的涂层往往不能满足保鲜的要求,所以出现了复合可食性涂层。层层自组装法是基于不同生物聚合物的交替沉积,形成多层涂层,该法可以有效控制可食性涂层的理化性能。本文简述了采用层层自组装技术制备可食性涂层的研究进展,讨论了用于形成可食性涂层的原材料、层层自组装法的特点和化学原理,以及其在果蔬保鲜上的应用。
Natural materials-based edible coatings provide a promising approach for prolonging storability of fruit and vegetables.Since one single material often cannot answer numerous applicative requirements,there has been recent development in composite edible coatings.The layer-by-layer self-assembly approach is based on the alternate deposition of different biopolymers and allows for a more effective control over the physicochemical properties and activity of edible coatings.In this review,the progress in the development of active edible coatings,by utilizing the layer-by-layer self-assembly approach,has been summarized.The discussion includes raw materials of edible coating,feature and chemical principles of layer-by-layer self-assembly,their preservation on various fruit and vegetables.
