摘要
为了考察壳聚糖和水杨酸处理对山药采后品质的影响。本研究将壳聚糖溶液设置3个浓度:0.5%、1.0%和1.5%,将水杨酸设置3个浓度:0.5、1.0和1.5 mmol/L。分别应用不同浓度的壳聚糖、水杨酸或壳聚糖+水杨酸浸泡山药段10 min。然后检测了不同处理组的山药失重率、木质素含量、腐烂率、总酚和总黄酮含量、可溶性固形物含量(SSC)、多酚氧化酶(PPO)活性、丙二醛(MDA)含量和过氧化物酶(POD)活性。结果显示,壳聚糖和水杨酸均降低了山药的失重率、腐烂率、PPO活性和MDA含量,并提高了木质素含量、总酚和总黄酮含量、SSC和POD活性。此外,1.0%的壳聚糖联合1.5 mmol/L的水杨酸处理具有最低的失重率、PPO活性和MDA含量,并且具有最高的木质素含量、总黄酮含量、SSC和POD活性。本研究表明壳聚糖和水杨酸单独处理均可降低山药采后的腐烂率并提高品质和抗氧化能力,1.0%的壳聚糖联合1.5 mmol/L的水杨酸可能是提高山药采后品质的最佳方案,对于山药的采后贮藏具有重要的参考价值。
In order to investi gate the effects of chitosan and salicylic acid treatment on postharvest quality of Chinese yam.In this study,three concentrations of chitosan solution were set:0.5%,1.0%and 1.5%,and three concentrations of salicylic acid were set:0.5,1.0 and 1.5 mmol/L.Different concentrations of chitosan,salicylic acid or chitosan+salicylic acid were used to soak the yam segments for 10 min.Then the weight loss rate,lignin content,decay rate,total phenol and total flavonoid content,soluble solid content(SSC),polyphenol oxidase(PPO)activity,malondialdehyde(MDA)content and peroxidase(POD)activity of yam in different treatment groups were detected.The results showed that both chitosan and salicylic acid decreased the weight loss rate,decay rate,PPO activity and MDA content of yam,and increased the lignin content,total phenolic and total flavonoid content,SSC and POD activity.In addition,1.0%chitosan combined with 1.5 mmol/L salicylic acid treatment had the lowest weight loss rate,PPO activity and MDA content,and had the highest lignin content,total flavonoid content,SSC and POD activity.This study shows that chitosan and salicylic acid alone can reduce the postharvest decay rate of yam and improve the quality and antioxidant capacity.1.0%chitosan combined with 1.5 mmol/L salicylic acid may be the best scheme to improve the postharvest quality of yam,which has important reference value for the postharvest storage of yam.
