摘要
通过概述阿魏酸修饰多糖的方法,探究阿魏酸提高多糖抗氧化能力及其原理,以期为拓宽多糖在食品工业上的应用提供理论依据。
By summarizing the methods of modifying polysaccharides with ferulic acid,the antioxidant capacity of polysaccharides improved by ferulic acid and its mechanism were explored,in order to provide a theoretical basis for broadening the application of polysaccharides in the food industry.
