油茶壳栽培富硒香菇的营养评价与分析 被引量:3

摘要 采用添加了不同比例油茶壳的配方栽培富硒香菇。对样品中蛋白质、硒、氨基酸含量进行了分析和评价。结果表明:样品中分别检测出17种氨基酸,谷氨酸含量最高。富硒香菇子实体的硒含量比CK提高了28.31~40.95倍,且必需氨基酸、非必需氨基酸、总氨基酸、鲜味氨基酸、苦味氨基酸、药用氨基酸含量及AAS、CS、RAA、EAAI、NI、BV值均随油茶壳添加比例的增加而增加。采用油茶壳栽培富硒香菇,可以较好提高香菇的营养价值。 Selenium-rich Lentinus edodes was cultivated by adding different proportions of Camellia oleifera shells.The protein,selenium and amino acids in the samples were analyzed and evaluated.The results showed that 17 kinds of amino acids were detected in the samples,and the content of glutamic acid was the highest.The selenium content of fruiting body of selenium-enriched Lentinus edodes was 28.31~40.95 times higher than that of CK,and the contents of essential amino acids,non-essential amino acids,total amino acids,delicious amino acids,bitter amino acids,medicinal amino acids and the values of AAS,CS,RAA,EAAI,NI and BV increased gradually with the increase of the proportion of Camellia oleifera shell.The cultivation of selenium-enriched Lentinus edodes in Camellia oleifera shell could better improve the nutritional value.
