摘要
蜜桃醋具有较强的清除羟自由基与DPPH自由基的能力,且在众多果醋中抗氧化能力优异,具有很高的保健和食用价值,市场发展前景广阔。针对年产量5000 t蜜桃醋饮料工厂开展设计研究,在设计过程中进行了详细的工艺论证,并且在此基础上制定产品方案,设计生产工艺,并进行经济技术分析。
Peach vinegar has a strong ability to scavenge hydroxyl radical and DPPH radical,and has excellent antioxidant ability in many fruit vinegar.It has high health care and edible value,market development prospects is broad.The design and research of peach vinegar beverage factory with annual output of 5000 t was carried out.In the design process,a detailed process demonstration is carried out,and on this basis,the product scheme is formulated,the production process is designed,and the economic and technical analysis is carried out.
