摘要 文章基于分析烟熏畜禽腊制食品加工和贮存,针对肉类烟熏腊制品工业的现状和不足,对烟熏腊制品冷链生产线进行系统性分析与研究,取得了二项专利技术成果。并将二项专利技术成果应用到烟熏腊制品冷链生产线之中,解决了一年四季何时何地加工烟熏腊制品技术难题,烟熏畜禽腊制品加工中降低亚硝酸盐、过氧化值、酸价、苯并(a)芘四者残留量技术难题,烟熏畜禽腊制品冻储中控制亚硝酸盐、过氧化值、酸价三者残留量技术难题。 Based on the analysis of the processing and storage of smoked livestock and poultry waxed food,and in view of the current situation and shortcomings of meat smoked and waxed products industry,makes a systematic analysis and research on the cold chain production line of smoked and waxed products,and obtains two patented technical achievements.The two patented technical achievements are applied to the cold chain production line of smoked wax products,which solved the technical problems of when and where to process smoked wax products in the four seasons of the year,the technical problems of reducing the residues of nitrite,peroxide value,acid value and benzo(a)pyrene in the processing of smoked livestock and poultry wax products,and the technical problems of controlling the residues of nitrite,peroxide value and acid value in the frozen storage of smoked livestock and poultry wax products.
