益生菌是一种具有活性的,对宿主的生理功能产生一种或多种有益作用的微生物。介绍益生菌种类及其生理功能,探讨益生菌在果蔬类食品、粮谷类食品、乳制品、调味品、水产品、肉制品、食用菌等农产品加工领域的应用情况。
Probiotics are active microorganisms that produce one or more beneficial effects on the physiological functions of the host.This paper introduced the species and physiological functions of probiotics,and discussed the application of probiotics in fruit and vegetable food,grain and cereal food,dairy products,condiments,aquatic products,meat products,edible fungi and other agricultural products.
