摘要
参考GB/T 5009.49—2008《发酵酒及其配制酒卫生标准的分析方法》,对白酒及其配制酒中甲醛的检测方法进行研究,对样品前处理、精密度、重复性、稳定性、准确度等方面进行方法学验证,同时对样品中酒精度、pH值和醛类物质对结果的影响进行验证,结果表明,直接法检测准确度高,白酒可用直接法测定;而配制酒中由于有颜色干扰,用蒸馏法测定比较合适;样品酒精度在50%Vol内,pH值为3.8~10.0时对结果影响较小;而醛类物质可能使检测结果偏高。
Referring to GB/T 5009.49—2008“analysis method of hygienic standard for fermented wine and its blended liquor”,the method of formaldehyde detection in Baijiu and its blending liquor was studied,and the method of pretreatment,precision,repeatability,stability,accuracy and so on were validated by methodology.Meanwhile,the effects of alcohol,pH and aldehydes on the results were verified and verified.The results showed that the direct method was highly accurate and the Baijiu could be directly determined by direct method.Due to the color interference in the prepared wine,the distillation method is more suitable;The precision of sample wine was within 50%Vol and the pH value was between 3.8~10.0,which had little effect on the results;Aldehydes may make the test results on the high side.
