摘要
食用胶是决定凝胶糖果质构特性的主要添加物,凝胶糖果的感官品质很大程度上取决于食用胶的质构特性。就食用胶来源、制备凝胶糖果常用食用胶种类及特性、凝胶糖果中食用胶复配类型及特性加以阐述,以期为凝胶软糖的工艺优化提供参考。
Edible gum is the main additive to determine the texture characteristics of gelatin candy.The sensory quality of gelation candy depends largely on the texture characteristics of edible gums.In this paper,the sources of edible gum,the types and characteristics of commonly used edible gum and complex gum are discussed.It's in order to provide references for the optimization of gelatin candy.
