糜子壳油微胶囊工艺优化及其理化特性分析 被引量:4

Optimization of Preparation Process of Panicum miliaceum L.Shell Oil Microcapsules and Analysis of Its Physicochemical Properties

摘要 为提高糜子壳油的储藏稳定性,制备了糜子壳油微胶囊,以乳清分离蛋白(WPI)和麦芽糊精(MD)为复合壁材,采用喷雾干燥法对糜子壳油进行包埋。以包埋率为指标来评价糜子壳油微胶囊乳化工艺,通过响应面实验优化其最佳参数。结果表明:在乳化剂添加量为1.8%,壁芯比为3∶1,壁材比为1.2∶1,乳化液固形物质量分数为22%时,所制备的糜子壳油微胶囊包埋率最高,为90.10%。所得产品的理化特性较好,其含水量为2.55%,堆积密度为0.38 g/cm^(3),休止角为38.63°,白度为81.63%,糜子壳油微胶囊的粒径分布均匀且集中,其体积平均粒径为0.892μm。表明制得产品的流动性和组织状态较好,具有较高的应用价值。 To increase the storage stability of panicum miliaceum L.shell oil,the microcapsules of panicum miliaceum L.shell oil were obtained by spray drying method with whey protein isolate(WPI)and maltodextrin(MD)as composite wall materials.The embedding rate was used as an index to evaluate the emulsification process of panicum miliaceum L.shell oil microcapsule,and the optimum parameters were optimized by response surface methodology.The results indicated that the amount of emulsifier addition was 1.8%,the wall-core ratio was 3∶1,the ratio of MD/WPI was 1.2∶1,and the emulsion solids mass fraction was 22%.Under these conditions,the embedding rate of panicum miliaceum L.shell oil microcapsule was 90.10%,which reached the highest.The physicochemical properties of the product were good,the moisture content,bulk density,angle of repose and whiteness were 2.55%,0.38 g/cm^(3),38.63°and 81.63%,respectively.The particle size distribution of panicum miliaceum L.shell oil microcapsule was uniform and concentrated,the volume average diameter was 0.892μm.It showed that the product had good fluidity and organization state,and it had high application value.
