食源外泌体在食品研究与开发中的应用研究

摘要 外泌体是由细胞分泌的纳米级胞外囊泡,作为信号传递分子,在细胞通讯中发挥着重要作用.近期研究表明,来自动物性、植物性、微生物性食品等的外泌体可以被肠道细胞吸收并通过血液循环进一步转运到其他器官,有助于丰富食品营养和提高人类健康.食源外泌体是外泌体领域的研究热点,并且在调节肠道健康、先天免疫以及预防或治疗疾病等方面的功能特性已被证明.我国有关食源外泌体的研究仍处于起步阶段,本文综述了食源外泌体的来源、生物学功能以及应用前景,旨在为外泌体在食品研究与开发中的应用提供参考. Exosomes are nanosized extracellular vesicles secreted by cells,which play a significant role in cell communication as signaling molecules.Recent studies have shown that exosomes from food sources such as animals,plants and microorganisms can be absorbed by intestinal cells and further transported to other organs through bloodstream,playing an important role in food nutrition and human health.Food-derived exosomes were a new exosome research hotspot.Their functions in intestinal health regulation,innate immunity,and disease prevention or treatment have been demonstrated.In our country,the research on food-derived exosomes is still at infant stage.This paper reviews the biological functions and potential application of food-derived exosomes,which can provide reference for the application of exosomes in food Tesearch and development.
