Analysis of Microbial Detection Results of Food Risk Monitoring in Wuhan City

目的:分析武汉市食品致病微生物监测结果及现状。方法:按照相关监测实施方案要求,对2020年1—12月武汉市辖区内部分超市、农贸市场以及餐饮店收集的食物样品进行检测,分析检测结果,并提出合理化应对方案。结果:总计200份自不同采样点采集的样品中,不合格41份(20.50%),其中集贸市场、个体零售店不合格样品数最高,各占36.00%、24.00%;集贸市场中焙烤及油炸食品、超市乳与乳制品、个体零售店鲜榨果蔬汁以及餐饮单位学生餐污染情况占比最高,各占16.00%、6.00%、10.00%和4.00%;蜡样芽孢杆菌、金黄色葡萄球菌检出率最高,各占18.00%、7.50%。结论:本次对武汉市食品微生物抽检显示,集贸市场应作为重点管理场所,而焙烤及油炸食品、乳与乳制品等应作为食品管理重点。

Objective:The monitoring results and current situation of food pathogenic microorganisms in Wuhan were analyzed.Method:According to the requirements of the relevant monitoring implementation plan,the food samples collected from some supermarkets,farmers’markets and restaurants in Wuhan municipality from January to December 2020 were tested,the test results were analyzed,and a rational response plan was proposed.Result:Among the 200 samples collected from different sampling points,41 were unqualified(20.50%).Among them,the bazaar and individual retail stores had the highest number of unqualified samples,accounting for 36.00%and 24.00%respectively;fried food,supermarket milk and dairy products,freshly squeezed fruit and vegetable juice in individual retail stores,and student meals in catering units accounted for the highest proportions of pollution,accounting for 16.00%,6.00%,10.00%,and 4.00%respectively;Bacillus cereus,Staphylococcus aureus the detection rate of cocci was the highest,accounting for 18.00%and 7.50%respectively.Conclusion:This sampling inspection of food microorganisms in Wuhan shows that the bazaar should be the key management place,and the baked and fried food,milk and dairy products should be the focus of food management.
