摘要
基于凯氏定氮法的原理,利用新型免水定氮仪测定肉制品中的蛋白质含量。结果显示,仪器的示值误差为0.5%,回收率为101%,重复性为0.27%,性能指标优越,稳定性好。猪肉中的蛋白质含量为22.7 g/100 g,RSD值为0.67%,精密度为1.7%;猪肝中的蛋白质含量平均值为21.3 g/100 g,RSD值为0.83%,精密度为1.9%。新型免水定氮仪实现了免水冷凝,环保经济,结果准确可靠,具有广阔的应用前景。
Based on the principle of Kjeldahl method,the protein content in meat products was determined by a new water-free nitrogen determination instrument.The results show that the indication error of the instrument is 0.5%,the recovery is 101%,and the repeatability is 0.27%.The performance index is superior and the stability is good.The protein content in pork was 22.7 g/100 g,RSD was 0.67%and precision was 1.7%;the average protein content in pig liver was 21.3 g/100 g,RSD was 0.83%,and the precision was 1.9%.The new water free nitrogen determination instrument has realized water free condensation,environmental protection and economy,accurate and reliable results,and has broad application prospects.
