质谱技术在食源性复杂多糖结构鉴定中的研究进展 被引量:1

摘要 食源性多糖来源广泛,拥有免疫调节、降血糖、调节肠道菌群等多种生物活性,并且多糖生物活性与其结构密切相关,研究食源性多糖精细结构有助于深入阐释其构效关系.然而,针对食源性多糖的高度异质性和复杂性,传统分析策略暴露出耗时、信息缺失、操作复杂等缺陷,不能满足现有对多糖精细结构研究的需求,而质谱技术的发展则为多糖结构解析提供了新的研究手段.本文综述了近年来质谱解析多糖结构的相关研究进展,认为液相色谱—质谱联用(liquid chromatography-mass spectrometry,LCGMS)是多糖解析的核心技术,而与信息技术深度融合建立的智能化分析平台是未来解析技术的发展趋势. Food-derived complex polyaccharides can come from a wide range of sources,and have various biological activities.such as immune rgulation,hypoglycemia,and prebiotie flete.However,the biological activity of polyaccharides is closely related to its chemical structure.Therefore,analyzing the fine structure of polysaccharides is becoming particularly acute in food.In view of the high heterogeneity and complexity of food-derived polyaccharides,traditional analysis strategies have exposed drawbacks such 1s time-consuming.information loss.and complicated operations,which cannot bridge the major gap in knowledge of polyaccharides'fine structure.Mass spectrometry is a powerful method in the analysis of polysaccharide structure.This review summarized the rcent researches on the area of polysaccharide structure analysis by mass spectrometry.We bllieved that liquidchromatography mass spectrometry(LC-MS)is the core technology.and the inllgent MS analysis platform established by the data processing technology will be the future trend in polysaccharide analysis.
