Comparative analysis of chemical constituents of deer tail from different provenances

摘要 目的对比分析3种不同种源鹿尾(梅花鹿尾、马鹿尾和赤鹿尾)核苷、粗蛋白、水解氨基酸、脂肪酸、无机元素、多糖6类化学成分含量差异。方法采用超高效液相色谱仪、快速定氮仪、气相色谱-质谱联用仪、电感耦合等离子体发射光谱仪、紫外分光光度计分别测定不同鹿尾中核苷、粗蛋白、水解氨基酸、脂肪酸、无机元素和总多糖含量。结果梅花鹿尾、马鹿尾和赤鹿尾均检出13种核苷,总量分别为4.56、1.92和3.32 g/kg;粗蛋白含量分别为74.25%、78.20%和71.90%;水解氨基酸含量分别为57.04%、52.21%和47.39%;梅花鹿尾检出13种脂肪酸,总量为16.45 g/kg,马鹿尾和赤鹿尾检出10种脂肪酸,总量分别为4.62和9.99 g/kg;梅花鹿尾和赤鹿尾检出19种无机元素,马鹿尾检出20种无机元素且含量最高;总多糖含量分别为5.45、5.21和4.32 g/kg。结论不同种源鹿尾化学成分有一定差异,核苷、水解氨基酸、脂肪酸和多糖含量在梅花鹿尾中较高;粗蛋白和无机元素含量在马鹿尾中较高。该研究首次较为全面地分析了不同种源鹿尾6类化学成分差异,为不同鹿尾的开发利用提供理论依据。 Objective To compare and analyze the contents of nucleoside,crude protein,hydrolyzed amino acid,fatty acid,inorganic element and polysaccharide in the tail of deer from three different provenances,namely,sika deer tail,Wapiti tail and Red deer tail.Methods Above chemical composition were determined by ultra-performance liquid chromatograph,rapid nitrogen determination instrument,gas chromatography-mass spectrometry,inductively coupled plasma emission spectrometer,ultraviolet spectrophotometer respectively.Results Thirteen nucleosides were detected in Sika deer tail,Wapiti tail and Red deer tail,with total values of 4.56,1.92 and 3.32 g/kg respectively;The contents of crude protein of the three species was 74.25%,78.20%and 71.90%;Hydrolyzed amino acids were 57.04%,52.21%and 47.39%respectively;13 kinds of fatty acids were detected in the tail of sika deer,with a total of 16.45 g/kg,10 kinds of fatty acids were detected in the tail of Wapiti and Red deer,with a total of 4.62 and 9.99 g/kg respectively;Nineteen inorganic elements were detected in both the tail of the sika deer and the red deer,and twenty in the tail of wapiti with the highest content;The total polysaccharide content was 5.45,5.21 and 4.32 g/kg,respectively.Conclusion There are some differences in chemical composition of deer tail from different provenances.The contents of nucleoside,hydrolyzed amino acid,fatty acid and polysaccharide in sika deer tail were higher than those in the other two species.The contents of crude protein and inorganic elements were the highest in wapiti tail.This study comprehensively analyze the differences of six kinds of chemical constituents of different provenances of deer’s tail and provided theoretical basis for the development and utilization of them.
