Nutritional evaluation and edible safety research of forsythia suspense leaves

摘要 目的探究连翘叶作为新食品原料开发的营养含量和食用安全性。方法使用食品安全国家标准中规定的方法,进行了连翘叶营养成分、卫生学指标及90 d经口毒性的研究。结果连翘叶含有丰富的蛋白质、膳食纤维、氨基酸、矿质元素及维生素等人体所需的营养素,其蛋白质的含量高达14 g/100 g,膳食纤维的含量为26.6 g/100 g,钾元素的含量为1.14 g/100 g,维生素E及β-胡萝卜素的含量也较高,能够满足作为食品原料的营养需求;卫生学成分检测结果表明,重金属和农药残留符合食品安全国家标准的相关规定;90 d经口毒性试验,未观察到中毒表现和体征,大鼠的体重、进食量、食物利用率、血液学、血生化等指标均未见损害性影响。结论试验结果表明连翘叶营养丰富,卫生学及90 d经口毒性试验安全,为其作为新食品原料研究提供了依据。 Objective To investigate the nutrient Content and edible safety of using forsythia leaves as new food ingredients.Methods The nutrient composition,hygiene ingredients,90-day oral toxicity test of forsythia leaves were evaluated by the national food safety standards.Results The forsythia leaves are rich in nutrients with are necessarry for human body,such as protein,dietary fiber,amino acid,mineral elements and vitamins.The protein content is 14 g/100 g,dietary fiber content is 26.6 g/100 g,potassium content is 1.14 g/100 g.Meanwhile the contents of vitamin E andβ-carotene are high,which can meet the nutritional requirements of food raw materials;Hygiene test result show that the detection values of heavy metals and pesticides conformed to the provisions of China national food safety standards;Through the 90-day oral toxicity test,the signs of poisoning were not observed in the rats.Meanwhile,the damaging effects were not observed in the body weight,food intake,food utilization rate,hematological indicators,blood biochemical indicators and so on.Conclusion The research has shown that forsythia leave is rich in nutrients and it is safe in hygienic and 90-day oral toxicity tests,which provides basis for its development as new food ingredients.
