基于广泛非靶向代谢组学解析富硒黄酒发酵过程的差异代谢产物 被引量:2

Analysis of Differential Metabolites in Selenium-enriched Yellow Rice Wine Fermentation Based on Extensive Non-targeted Metabolome

摘要 以富硒糯米为原料,酿制富硒黄酒,分析了黄酒的硒转化效率,并利用广泛非靶向代谢组学对富硒黄酒发酵过程中的差异代谢产物进行了高通量解析。结果表明:黄酒的富硒效果非常明显,硒转化效率达到20.73%,且有机硒占总硒的比例达85.64%;与普通黄酒相比,富硒黄酒在发酵过程中的代谢产物有明显差异,促进了酒液中羧酸及其衍生物类等代谢物的生成,大幅降低了甘油磷脂类物质的含量,其上调表达的代谢物数占总差异代谢物数的75.85%;富硒黄酒对花生四烯酸代谢、异喹啉生物碱生物合成、苯丙氨酸代谢、精氨酸生物合成、乙醛酸和二羧酸代谢等KEGG代谢通路具有显著的调控作用。 In this study,Se-enriched yellow rice wine was brewed from Se-enriched glutinous rice.The Se conversion efficiency of yellow rice wine was analyzed,and the differential metabolites in the fermentation process of Se-enriched rice wine were analyzed by extensive non-targeted metabolome.The results indicated that the Se enrichment effect of yellow rice wine was very obvious.The Se conversion rate reached 20.73%,and the organic Se accounted for 85.64%of the total Se.Se enrichment had a significant effect on the metabolites in the fermentation process of yellow rice wine,which promoted the formation of carboxylic acids and derivatives metabolites in the liquor,and greatly reduced the content of glycerol phospholipids.The up-regulated metabolites accounted for 75.85%of total differential metabolites.It can significantly regulate KEGG metabolic pathways such as arachidonic acid metabolism,isoquinoline alkaloid biosynthesis,phenylalanine metabolism,arginine biosynthesis,glyoxylic acid and dicarboxylic acid metabolism.
