增加塑料薄膜封窖对浓香型白酒的影响分析

摘要 白酒发酵过程中封窖泥的运用既能给窖池提供厌氧环境,为后期无氧产酒产酯提供条件,又隔绝了空气中的微生物,是发酵过程中不可缺少的环节。传统浓香型白酒采用一定厚度封窖泥封窖,操作要求高,开窖时糟醅易混入封窖泥降低封窖泥的密封性,封窖泥水易渗入糟醅影响产酒质量,生产过程中糟醅及封窖泥混合废弃物较多,窖池工将其清理干净费时费力。本研究探索在封窖泥和糟醅之间新增物理隔离层,结果表明,此封窖方式封窖密闭性更高;增加塑料薄膜封窖对窖池升温无负面影响,更有利于冬季入窖窖池升温;增加塑料薄膜封窖的窖池产量分别高于使用原有封窖方式的窖池10.1%和29.59%,增加塑料薄膜封窖对产量无负面影响;使用塑料薄膜封窖窖池产酒中DEP、DEHP、DINP均未超企业内部标准,该物理隔离材料可以使用。该研究为后期新封窖方式的研究提供数据支撑。 The application of pit sealing mud in the fermentation process of Baijiu not only provides an anaerobic environment for the production of alcohol and esters,but also isolates the pit from the microorganisms in the air.It is an indispensable link of the fermentation process.In the traditional production process of Nongxiang Baijiu,thick sealing mud is applied,which had high operation requirements.The sealing mud is easily mixed with the fermented grains when opening the pit,and the water in the sealing mud is easy to leak into the fermented grains,which will affect the quality of the produced liquor.In addition,a lot of mixed waste is produced in the process,which is difficult to clean up.In this study,a kind of plastic film is added between the sealing mud and the fermented grains.The experimental results show that the new pit sealing method has higher sealing tightness.The added plastic film has no negative effect on the temperature rise in the pit,and is more conducive to the temperature rise in winter.The yield of the pits with the plastic film is 10.1 % to 29.59 % higher than that without the plastic film,indicating that the added plastic film has no negative effect on the liquor yield.The DEP,DEHP and DINP of the liquor from the pits with the plastic film do not exceed the standards of the enterprise,indicating that the plastic film is safe to use.This study provides data support for future research on new pit sealing methods.
