摘要
通过对浓香型大曲生产工艺进行全流程梳理,分析出大曲断面裂缝形成原因,主要有温度、位置、工艺操作、移动运输四个方面。通过曲粮粉碎度、踩曲水分、主发酵温度、人工操作的主观管控,双沟大曲的出房曲断面裂缝病症得到了有效遏制,裂缝产生几率大幅度降低,优等曲占比提高到44.74%。
In this paper the whole production process of Nongxiang Daqu is inspected,and the main causes of Daqu section cracks are found out as follows:temperature,location,operation and transportation.Through the control of grain crushing degree,moisture content,main fermentation temperature and manual operation,the section cracks of the finished Shuanggou Daqu have been effectively reduced,and the proportion of excellent Daqu has been increased to 44.74 %.
