摘要
目的监测并评估河南省市售动物源性食品中喹诺酮类抗生素的残留水平与健康风险,为食品监管部门制定相关监管措施提供科学依据。方法使用高效液相色谱串联质谱仪检测2019年—2020年河南省市售345份动物源性食品中喹诺酮类抗生素的残留量,并采用食品安全指数法对喹诺酮类抗生素暴露状况进行评估。结果恩诺沙星在所有类别样品中均有检出,检出率高低排序为猪肉>水产品>鸡蛋>鸡肉,超标样品主要是猪肉和鸡蛋。对多种食物同时进食带来的健康风险进行评估,分别以恩诺沙星和环丙沙星每日摄入总量的平均值和最大值计算,食品安全指数均<1。结论河南省居民每日通过食用动物源性食品摄入恩诺沙星的暴露量低于国家标准,处于相对安全水平。
Objective The residues and health risks of quinolone antibiotics in animal-derived foods in Henan Province were monitored and evaluated to provide scientific basis for the food regulatory authorities to formulate relevant regulatory measures.Methods The quinolone antibiotic residues of 345 animal-derived food in Henan Province from 2019 to 2020 were determined by high-performance liquid chromatography-tandem mass spectrometry,and the exposure risk of quinolone antibiotics was evaluated by food safety index method.Results Enrofloxacin was detected in all samples,and the order of detection rate was pork>aquatic products>eggs>chicken.The samples exceeding the standard were mainly pork and eggs.The average and maximum daily intake of enrofloxacin and ciprofloxacin were calculated to evaluate the health risks caused by simultaneous consumption of a variety of foods,and the food safety index was less than 1.Conclusion The daily exposure of enrofloxacin residents from animal-derived foods in Henan Province was lower than the national standard,and it was at a relatively safe level.
