摘要
目的对江西省市售婴幼儿配方奶粉中氯丙醇酯及缩水甘油酯污染状况进行调查分析,为食品安全风险评估提供可靠的数据支持。方法于2019年在江西省各大超市、母婴店随机采集69份婴幼儿配方奶粉样品,采用气相色谱-质谱联用法对样品中3-氯-1,2-丙二醇酯(3-MCPDE)、2-氯-1,3-丙二醇酯(2-MCPDE)、缩水甘油酯(GE)含量进行检测,并对检测数据进行统计学分析。结果3-MCPDE检出率为79.7%,含量为ND~0.245 mg/kg,均值为0.0341 mg/kg;2-MCPDE检出率为84.1%,含量为ND~0.0534 mg/kg,均值为0.0174 mg/kg;GE检出率为82.1%,含量为ND~0.299 mg/kg,均值为0.0357 mg/kg。婴幼儿配方奶粉样品中3-MCPDE及GE整体污染水高于2-MCPDE,0~6月龄奶粉中3-MCPDE、GE污染水平显著高于6月龄~12月龄及12月龄~36月龄。结论江西省市售婴幼儿配方奶粉中氯丙醇酯及缩水甘油酯污染普遍存在,需高度重视0~6月龄奶粉中3-MCPDE及GE污染问题。
Objective To investigate the contamination status of chloropropanol esters(MCPDE)and glycidyl esters(GE)in infant formula milk powders sold in Jiangxi Province,and provide reliable data support for the risk assessment of food safety.Methods In 2009,69 samples of infant formula were collected randomly from supermarkets and maternal-infant stores in Jiangxi Province.The contents of 3-MCPDE,2-MCPDE and GE were detected by gas-chromatography-mass spectrometry and the data were analyzed by statistics.Results The detection rate of 3-MCPDE in infant formulas was 79.7%with contents ranging from not detected(ND)to 0.245 mg/kg and the mean level of 0.0341 mg/kg.The detection rate of 2-MCPDE in infant formulas was 84.1%with contents ranging from ND to 0.0534 mg/kg and the mean level of 0.0174 mg/kg.The detection rate of GE in infant formulas was 82.1%with contents ranging from ND to 0.299 mg/kg and the mean level of 0.0357 mg/kg.The contamination levels of 3-MCPDE and GE were higher than that of 2-MCPDE in infant formula milk powder.The contamination levels of 3-MCPDE and GE in formulas for 0-6 months infants were significantly higher than those in formulas for6-12 months and 12-36 months infants.Conclusion The contamination of MCPDE and GE is common for infant formulas sold in Jiangxi Province.The contamination issues of 3-MCPDE and GE in formulas for 0-6 months infants require greater attention.
