摘要
为了探讨振荡时间、频率对双孢蘑菇运输过程及后续贮藏期间品质的影响,将双孢蘑菇置于2、3、4 Hz振荡频率下分别振荡2、4、8 h后,于(10±1)℃继续贮藏,以不振荡处理为对照,研究贮藏期间双孢蘑菇的外观、总色差(ΔE)、硬度、失重率、丙二醛(Malondialdehyde,MDA)含量、相对电导率、总酚、多酚氧化酶(Polyphenol oxidase,PPO)活性和Vc含量等品质指标变化。结果表明,振荡频率为2 Hz时,处理8 h也不会对双孢蘑菇贮藏期间的品质造成明显损伤;振荡频率为3 Hz时,双孢蘑菇贮藏期间品质随振荡时间的延长而逐渐下降,尤其是3 Hz 8 h处理极大缩短了双孢蘑菇的货架期;振荡频率为4 Hz时,即使短时间处理(2 h)也会对双孢蘑菇的品质造成严重损伤,主要表现为菌盖出现褐斑并伴随ΔE值升高,子实体软化和硬度下降,MDA含量和相对电导率升高,PPO活性升高和Vc含量明显降低。研究结果为物流运输过程中双孢蘑菇损伤阈值界定及后续运输损伤控制措施的深入研究提供了理论依据。
This study aimed to explore the effects of oscillation time and frequency on Agaricus bisporus simulated transportation process and subsequent storage quality,Agaricus bisporus was stored at(10±1)℃after b eing o scillated at 2,3,4 H z f or 2,4,8 h,r espectively,w ith n on-oscillation t reatment as the control.The changes in appearance,the total color difference(ΔE),hardness,weight loss rate,malondialdehyde(MDA),relative electrical conductivity,total phenol,polyphenol oxidase(PPO)activities and Vc content of Agaricus bisporus during storage were measured.The results showed that when the oscillation frequency was 2 Hz,the quality of Agaricus bisporus was not significantly damaged even 8 h treatment.When the oscillation frequency was 3 Hz,the quality of Agaricus bisporus decreased gradually with the extension of oscillation time during storage,especially the shelf life of Agaricus bisporus was greatly shortened by 3 Hz 8 h treatment.When the oscillation frequency was 4 Hz,the quality of Agaricus bisporus was seriously damaged even if treated for a short time(2 h),mainly manifested as brown spots on the lid accompanied by an increase inΔE value,fruit body softening and decreasing in hardness,MDA content and relative electrical conductivity constantly increasing,PPO activities increasing but Vc content significantly decreasing.This study provides a theoretical basis for the definition of damage threshold on Agaricus bisporus in logistics transportation and further research on transportation damage control measures.
