不同葡萄品种果实品质与葡萄酒香气成分的比较分析 被引量:4

摘要 为了提高酿酒葡萄与葡萄酒的品质,课题组筛选适宜于宁夏贺兰山东麓的红色酿酒葡萄品种,以宁夏贺兰山东麓金山酿酒葡萄小产区种植的“桑娇维塞”“西拉”“小味尔多”“巴贝拉”“佳丽酿”“摩尔多瓦”为材料,比较分析葡萄果实品质、葡萄酒酒样品质及香气等评价指标。结果表明:不同酿酒葡萄品种之间的果实品质和葡萄酒品质都存在显著性差异;葡萄酒的香气检测结果显示,不同品种酒样测出的各类物质种类和相对含量不同;综合评价比较分析不同葡萄品种之间果实品质与葡萄酒品质得出,“巴贝拉”总体状况最为良好,其次为“西拉”。 In order to improve the quality of wine grapes and wines,red wine grape varieties suitable for the eastern foothills of Helan Mountain in Ningxia were selected.The evaluation indexes such as fruit quality content,wine like quality content and aroma were compared and analyzed with“Sangiovese”“Syrah”“Petit Verdot”“Barbera”“Cabernet Franc”and“Moldova”planted in Jinshan wine grape small production area in the eastern foothills of Helan Mountain in Ningxia.The results showed that there were significant differences in fruit quality and wine quality among different wine grape varieties.The aroma test results of wine showed that the types and relative contents of various substances measured in different varieties of wine samples were different.Through comprehensive evaluation and comparative analysis of fruit quality and wine quality among different grape varieties,it is concluded that“Barbera”is in the best overall condition,followed by“Syrah”.
