摘要 微生物酶属于一种应用范围较广的催化剂,可显著提升氧化、水解、合成的速度,有利于我国食品加工检测工作的质量和效率的提升。目前食品安全相关问题受到了越来越多的重视,为了进一步推动食品加工检测工作的效果,相关部门有必要合理应用微生物酶技术。所以本文对微生物酶技术在食品加工与检测中的应用进行分析,以供相关人员参考。 Microbial enzymes belong to a wide range of catalysts, which can significantly improve the speed of oxidation, hydrolysis and synthesis, which is beneficial to the improvement of the quality and efficiency of food processing and testing in China. At present, food safety-related issues have received more and more attention. In order to further promote the effect of food processing testing, it is necessary for relevant departments to reasonably apply microbial enzyme technology. Therefore, this paper analyzes the application of microbial enzyme technology in food processing and testing for the reference of relevant personnel.
