中药材贮藏过程中“走油”变质的影响因素品质评价及其机制研究进展

Research Advances in Influencing Factors,Quality Evaluation,and Mechanisms of Rancidness of Chinese Medicinal Materials During Storage

“走油”是中药材贮藏过程中普遍存在的一种变质现象,常发生于富含油脂、糖、黏液质、蛋白质、挥发油等成分的中药材。“走油”后的药材轻则药性散失、疗效降低,重则产生毒性,致人死亡。对贮藏过程中药材发生“走油”变质的影响因素、“走油”前后品质评价及变质机制进行研究分析,为寻找合适的中药材贮藏条件、规范中药材贮藏管理、制定有效的中药贮藏期提供参考。

Rancidness is a common deterioration phenomenon in the storage of Chinese medicinal materials,which often occurs in those rich in oils,sugars,mucus,proteins,volatile oils,and other components.Rancidness can blunt the properties and reduce the efficacies of Chinese medicinal materials.More severely,Chinese medicinal materials after rancidness can be toxic and lead to death.The present study investigated the influencing factors,changes in quality,and mechanisms of rancidness of Chinese medicinal materials during storage to provide a scientific basis for determining optimal storage conditions,standardizing the storage management,and formulating an effective storage period of Chinese medicinal materials.
