摘要
赣菜历史悠久,文化底蕴浓厚,具有风味独特、流派纷呈、发展迅速等特征,是为江南名品。但是,与其他菜系相比较,赣菜还存在特点不突出、产业规模偏小、政策扶持薄弱、文化挖掘不充分、宣传推广力度不足、人才队伍建设滞后、行业协会作用缺失等问题。因此,要振兴赣菜产业,需积极转变发展思维,灵活调整发展策略,努力实现从“野蛮生长”向“顶层设计”转变、从“文化传承”向“品牌创新”转变、从“单一产业”向“产业集群”转变、从“师徒对接”向“职业培训”转变、从“传统经营”向“资本运作”转变、从推动行业单兵作战向抱团发展转变。
With a long history and rich culture,Jiangxi cuisine,as one of the famous brands in the areas south of the lower reaches of the Ymangtze River,features special flavor,various styles and rapid growth.However,as opposed to other cuisines,Jiangxi cuisine,without distinctive characteristics,is small in scale and gains little policy support.Besides,what makes it worse is the inadequate exploration of culture,insufficient publicity,slow talent team construction and missing role of industry association.Thus,in order to revitalize Jiangxi cuisine,one should vigorously shift his perspective on development and adjust strategies for development.As a result,such transformation should be made from barbaric growth to top-level design,from cultural inheritance to brand innovation,from a single industry to industrial cluster,from apprenticeship to vocational training,from traditional management to capital operation and from individual development to cooperative development.
