摘要
本研究选取144只150日龄的新品种扬州鹅公鹅为研究对象,研究去势对公鹅肉质性状的影响。结果表明,240日龄去势鹅胸肌和腿肌肌纤维横截面积显著低于对照组,去势鹅腿肌剪切力显著低于对照组,而去势鹅肌内脂肪含量明显高于对照组。饲喂丙酸睾酮后腿肌肌纤维横截面积增大,肌内脂肪含量下降。基因表达研究结果显示,在240日龄去势鹅腿肌组织中PPARγ、RXRG、FASN和A-FABP的表达量上升,显著高于对照组,而饲喂丙酸睾酮后PPARγ、FASN和A-FABP的表达水平显著下降。MYOG在对照组胸肌和腿肌组织中的表达量显著高于去势组。这些研究结果说明,去势能显著提高鹅肌间脂肪沉积,降低肌肉横截面积和肌肉剪切力,提高肉品质。
In this study,144150-day-old Yangzhou ganders were selected as the research objects to explore the effects of caponization on meat quality of Yangzhou ganders.The results showed that the cross-sectional area of breast and leg muscles in the caponized group was significantly lower than that in the control group at 240 d,and the shear force of leg muscle in the caponized group was significantly lower than that in the control group,while the content of intramuscular fat in the caponized group was significantly higher than that in the control group.After supplementation with testosterone propionate,the intramuscular fat content decreased and the cross-sectional area of leg muscle fibers increased.The results of gene expression showed that the expression levels of PPARγ,RXRG,FASN and A-FABP in leg muscle of the caponized geese at 240 d were significantly higher than those of the control group.After supplementation with testosterone propionate,the expression levels of PPARγ,FASN and A-FABP decreased significantly.The expression levels of MYOD in the control group were significantly higher than those in the caponized group.In conclusion,caponization can significantly improve intermuscular fat deposition of goose,reduce muscle cross-sectional area and muscle shear force,and improve meat quality.
