刺参与低值海参多糖组成、结构及活性分析 被引量:4

摘要 刺参具有很高的商业价值和营养价值,深受消费者的喜爱。由于海参富含多糖等活性成分,近些年来成为产业界和学术界研究和开发的热点。海参品种多,商业价值和营养价值有一定差异。文章对比分析了刺参和3种低值海参的营养成分及多糖提取率、化学组成、单糖组成、结构及生物活性,以期为海参高效利用提供理论依据,为海参加工业提供指导。 Apostichopus japonicus possesses high commercial and nutritional value,and it is highly praised and appreciated by consumers.Sea cucumbers are rich in polysaccharides and other active ingredients,therefore,it has become a research and development hotspot in the industry and academia in recent years.There are many varieties of sea cucumbers,and they may exist certain differences in commercial and nutritional value.This paper compared the nutritional composition,polysaccharide extraction rate and the chemical composition,monosaccharide composition,structure and biological activity of polysaccharide between Apostichopus japonicus and three low-value sea cucumbers.This will provide a theoretical basis for the efficient utilization of sea cucumbers and provide guidance for the sea cucumber industry.
