摘要
游客对目的地餐厅菜品特别是本地菜品是否满意不仅影响着对餐厅的评价,还影响着对目的地的整体印象。本研究以哈尔滨餐厅鹿肉菜品为例,通过对消费点评内容的分析,研究了菜品质量、“地道”性、价格水平和道德考量对目的地餐厅顾客菜品满意度的影响。研究发现顾客最重视味道、份量、菜品名、食材真实性、卫生情况和外形6个菜品质量属性,是否“地道”也是影响顾客菜品满意度的重要因素,顾客对高价格水平的菜品更容易感到不满,道德因素也是影响目的地餐厅顾客菜品满意度的重要因素。
Whether tourists are satisfied with the destination restaurant dishes,especially the local dishes,not only affects the evaluation of the restaurant,but also affects the overall impression of the destination.This study takes the venison dishes in Harbin restaurant as an example,through the analysis of the content of consumer reviews,this paper studies the impact of dish quality,“authentic”,price level and moral considerations on customer satisfaction with the dishes in the destination restaurant.Research found that customers pay the most attention to taste,portion,dishes,food authenticity,hygiene and appearance six food quality attributes.Whether“authentic”is also an important factor affecting customer food satisfaction.Customers are more likely to be dissatisfied with dishes with high price levels,and moral factors are also an important factor affecting customer satisfaction with dishes in destination restaurants.
