2017—2021年邯郸市市售皮蛋中铅和铜含量调查

Investigation on content of lead and copper in preserved eggs sold in Handan from 2017 to 2021

摘要 目的了解2017—2021年邯郸市市售皮蛋中铅和铜含量,为开展食品安全风险评估、制定食品安全标准和采取有针对性的控制措施提供科学依据。方法2017—2021年从邯郸市超市、农贸市场和批发市场分别采集传统工艺皮蛋和改良工艺皮蛋,共计306份。采用GB 5009.12—2017规定的电感耦合等离子体质谱法测定铅元素,采用GB 5009.13—2017规定的电感耦合等离子体质谱法测定铜元素,以食品安全国家标准GB 2762—2017《食品中污染物限量》规定限值进行评价。结果2017—2021年邯郸市不同工艺和销售环节的皮蛋中铅和铜均有检出,传统工艺皮蛋中铅含量较高,最高达1.35 mg/kg;改良工艺皮蛋虽然铅含量较低,但铜含量明显增高,最高达7.38 mg/kg。结论2017—2021年邯郸市市售皮蛋类食品中铅残留水平相对良好,铅残留较少的皮蛋中铜含量相对增高,提示人们应尽量减少皮蛋的摄入量。 Objective To understand the content of lead and copper in preserved eggs sold in Handan from 2017 to 2021,and to provide scientific basis for implementing food safety risk assessment in preserved eggs,developing food safety standards and adopting targeted control measures.Methods Totally 306 preserved egg samples made by traditional and improved technologies were collected from Handan supermarkets,farmers’markets and wholesale markets from 2017 to 2021.The content of lead was detected with the inductively coupled plasma massspectrometry(ICP-MS)GB 5009.12-2017,and content of copper was detected with ICP-MS set out in GB 5009.13-2017.The quality of the samples was evaluated in accordance with national health standard GB 2762—2017(limited quantity for limits of contaminants in food).Results Lead and copper were detected in preserved eggs developed with different technologies and sales links in Handan from 2017 to 2021.The content of lead in preserved eggs with traditional technology was higher,and hit 1.35 mg/kg to the maximum extent;the content of lead in preserved eggs with improved technology was lower,and the content of copper increased significantly,hitting 7.38 mg/kg.Conclusion The lead content of preserved eggs products sold is relatively satisfactory in Handan from 2017 to 2021,and that the copper content of preserved eggs with less lead residues is relatively higher,advising people to minimize their intake of preserved eggs.
