摘要
以茶多酚、壳聚糖为原料制备了一种茶多酚/壳聚糖复合保鲜剂。以贮藏期间样品的失重率、腐烂率、可溶性固形物、还原糖、维生素C、有机酸含量为质量指标,考察茶多酚/壳聚糖复合保鲜剂对红提葡萄的保鲜效果。结果表明,茶多酚/壳聚糖复合保鲜剂对红提葡萄具有较好的保鲜效果,葡萄的贮藏期由原来的6~9d延长至12~15d。
A tea polyphenols/chitosan composite preservative was prepared from tea polyphenols and chitosan.The preservative effect of tea polyphenol/chitosan compound preservative agent on red grape was investigated by using weight loss rate,decay rate,soluble solids,reducing sugar,vitamin C and organic acid content as quality indexes during storage.The results indicated that the tea polyphenol/chitosan compound preservative exhibited good ability to retain freshness and the storage period of red grape was extended from 6~9 days to 12~15 days.
