食品质量管理实践、供应链可追溯与企业可持续绩效——基于全国四省食品企业的问卷调查 被引量:7

Food Quality Management Practices,Supply Chain Traceability and Firm Sustainability Performance:A Questionnaire Survey of Food Firms in Four Provinces of China

摘要 食品质量管理作为一种通过组织内部和外部的质量合作以推进食品质量的持续改善和良好绩效的实践在近年来受到学术界的极大关注,但其对组织可持续绩效的作用效果还没有得到深入探讨。考虑到食品质量管理潜在的经济、环境和社会价值,旨在探讨核心企业实施食品质量管理是否以及如何促成可持续绩效的改善。基于资源基础观和资源依赖理论,以供应链可追溯为中介变量,构建食品质量管理实践对组织可持续绩效影响的理论模型。采用问卷调查法对全国四省358家食品企业进行调查,运用层级回归和中介效应检验方法,实证结果发现:(1)食品质量管理实践对可持续绩效具有显著的正向直接影响;(2)食品质量管理实践促进可持续绩效改进的过程中,受到供应链可追溯的中介作用;(3)供应链可追溯在不同维度的食品质量管理实践和可持续绩效之间起到部分或完全的中介作用。研究结论不仅能够丰富食品质量管理文献,为之提供新的实证证据,而且还提供了对食品供应链管理者如何在可追溯技术的支持下通过质量管理改善可持续绩效的启示。 In recent years,food quality management,as a practice of promoting continuous improvement and good performance of food quality through quality cooperation within and outside the organization boundary,has received great attention from the academia,but its effect on firm sustainability performance has not been thoroughly discussed.Considering the potential economic,environmental and social value of food quality management,this paper aims to explore whether and how focal companies can improve sustainability performance by implementing food quality management.Based on the resource-based view and the resource dependence theory,this paper explores the impact mechanism of food quality management practice improving firm sustainability performance with supply chain traceability as a mediator.Through the questionnaire survey of 358 food firms in four provinces of China,using hierarchical regression and mediation effect testing methods,the study produces the empirical results which show the following.Firstly,food quality management practice has a significantly positive and direct impact on firm sustainability performance.Secondly,the impact process of food quality management practice in improving sustainability performance is indirectly affected by supply chain traceability.And thirdly,supply chain traceability plays a partial or complete mediating role between different dimensions of food quality management practices and sustainability performance.The conclusions of this study not only contribute to the literature on food quality management while adding new empirical evidence,but also provide useful insights on how food supply chain managers can improve sustainability performance through food quality management with the support of traceability technologies.
