摘要
[目的]探索密封降氧对烟叶醇化后质量的影响。[方法]以常规醇化方式为对照(CK),运用新型气调法,设置1.5%~2.0%(T_(1))和7.5%~8.0%(T_(2))2个低氧处理,连续醇化750 d。研究不同醇化条件的醇化环境、醇化后烟叶高光谱特征以及烟叶的化学成分、中性致香物质以及感官质量差异。[结果]不同处理醇化环境温度差异不显著,而相对湿度与氧气浓度有较大差异;不同处理醇化后的烟叶在可见光区域的反射率差异较大,且CK处理的烟叶黄边位置与蓝边位置出现的波长位置长于T_(1)与T_(2);低氧处理能够显著降低烟叶淀粉含量,提高总糖与还原糖的含量,且感官质量的得分表现为T_(2)>T_(1)>CK。[结论]通过低氧处理T_(2)(7.5%~8%)可以显著提高烟叶的感官质量。
[Objective]In order to explore the effect of sealed oxygen reduction on the quality of tobacco after aging.[Method]Compared with the conventional alcoholization method,the new modified atmosphere method was used to treat with 1.5%-2.0%(T_(1))and 7.5%-8.0%(T_(2))low oxygen for two years.The aging environment,hyperspectral characteristics,chemical composition,neutral aroma components and sensory quality of aged tobacco leaves under different aging conditions were studied.[Result]The results showed that there was no significant difference in temperature,but there was significant difference in relative humidity and oxygen concentration among different aging treatments;the reflectance of tobacco leaves aged by different treatments was different in visible light region,and the wavelength position of yellow edge and blue edge of tobacco leaves aged by CK was longer than that of T_(1) and T_(2);hypoxia treatment could significantly reduce the starch content of tobacco leaves and increase the total sugar content.The score of sensory quality was T_(2)>T_(1)>CK.[Conclusion]T_(2)(7.5%-8.0%)could significantly improve the sensory quality of tobacco leaves.
