摘要 【目的】探明贵阳烟叶蜜甜香型风格的密集烘烤工艺,为进一步提升贵阳烤后烟叶品质并彰显其蜜甜香型风格特色提供技术保障。【方法】以云烟87为试材,以贵阳市烟叶生产指导烘烤工艺为对照,根据关键稳温点的干湿球参数,设置中温/高湿、中温/高低高湿、中温/中湿3个烘烤工艺处理,研究各烘烤工艺对烤后烟蜜甜香型彰显度、经济性状、外观质量、主要化学成分含量及评吸质量的影响。【结果】干/湿球以变黄期38℃/37℃、凋萎期42℃/36℃、变筋期47℃/36℃、干片期52~54℃/39℃、干筋期65~68℃/42℃的处理烤后烟叶蜜甜香典型度最高,经济性状、外观质量、化学成分协调性及评吸质量均最优。【结论】贵阳蜜甜香烟叶密集烘烤宜采用“中温高湿变黄,低湿凋萎、变筋,高湿干片、干筋”工艺。 【Objective】The bulk curing technology of tobacco leaves with honey-sweet aroma style is discussed to provide the technical support for further improving quality of cured tobacco leaves with honey-sweet aroma style in Guiyang.【Method】The effects of three designed curing technological treatments according to dry/wet bulb parameters of key temperature stability point(moderate temperature/high humidity,moderate temperature/high-low-high humidity and moderate temperature/moderate humidity)on honey-sweet expression,economic traits,appearance quality,major chemical composition content and smoking quality of cured tobacco leaves of Yunyan 87 are analyzed and evaluated under different curing technologies by taking the Guiyang technology in flue-cured tobacco production as CK.【Result】The honey-sweet expression,economic traits,appearance quality,chemical composition harmony and smoking quality of cured tobacco leaves of Yunyan 87 are the best under the curing conditions of dry/wet bulb temperature at 38℃/37℃at yellowing stage,at 42℃/36℃at wilting stage,at 47℃/36℃at midrib yellowing stage,at 52~54℃/39℃at leaf drying stage and at 65~68℃/42℃at midrib drying stage.【Conclusion】The optimal bulk curing technology for tobacco leaves of Yunyan 87 with honey-sweet aroma style includes moderate temperature and high humidity for leaf yellowing,low humidity for leaf wilting,midrib yellowing,high humidity for leaf and midrib drying in Guiyang.
