巧克力布丁果的营养评价及在食品加工中的应用

摘要 巧克力布丁果(Diospyros digyna Jacq.),又称黑肉柿,为柿树科柿属热带亚热带常绿乔木,原产于墨西哥等地,具有营养价值也具有保健功效,具有很大的开发前景。然而,国内缺少对巧克力布丁果的系统研究。为了更好地系统研究巧克力布丁果和加深人们对巧克力布丁果作为食品原料潜力的认识,对巧克力布丁果的生长习性、营养特性、生物活性及作为食品原料用于加工研究进行概述,以期为这种水果深度开发和利用提供参考。 Chocolate pudding fruit(Diospyros digyna jacq.),also called black sapote,which belongs to genus Diospyros of the Ebenaceae family,was a kind of tropical and subtropical evergreen trees.It was native to Mexico.It not only had nutritional value,but also had health care effect,so it had broad application prospects.However,there was a lack of systematic research on chocolate pudding fruit in China.In order to better systematically study chocolate pudding fruit and deepen people’s understanding of the potential of chocolate pudding fruit as food raw material,the growth habit,nutritional characteristics,biological activity and processing research of chocolate pudding fruit as food raw material were summarized,and this would then provide reference for the deep development and utilization of this kind of fruit.
