摘要
洛阳伊水大鲵是中国农产品地理标志产品,为确定伊水大鲵油的营养价值,利用木瓜蛋白酶酶解法提取大鲵油,并对伊水大鲵油的理化性质和脂肪酸组成进行分析。结果表明,伊水大鲵油最适粗提条件为加酶量1%、温度50℃、pH 6.5、酶解1.5 h。经脱胶、脱酸、脱色后的伊水大鲵油酸值为1.10 mg/g,过氧化值为0.16 mg/g,皂化值为121.73 mg/g。不饱和脂肪酸含量为72.9 g/100 g,其中EPA和DHA的含量分别为0.91 g/100 g和1.77 g/100 g,ω-6/ω-3比值为4.34︰1。该提取工艺获得的伊水大鲵油其理化性质较好,具有一定营养和保健价值,为洛阳伊水大鲵油的开发利用提供理论依据。
Yi-Shui giant salamander in Luoyang is a geographical indication of agricultural products in China.In order to determine the nutritional value of the Yi-Shui Giant Salamander oil,the oil was extracted by papain.Subsequently,the physicochemical property and fatty acid composition of the Yi-Shui Giant Salamander oil were analyzed.The result showed that the optimum condition for crude extraction of Yi-Shui Giant Salamander oil was adding 1%papain,enzymolysised in 50℃with pH 6.5 for 1.5 h.After degumming,deacidification and decolorization,the acid value,perxoide value and saponification value of the oil were 1.10,0.16 and 121.73 mg/g,separately.According to the analysis of fatty acid composition and contents,the unsaturated fatty acids(UFA)were 72.9 g/100 g.The contents of EPA and DHA were 0.91 g/100 g and 1.77 g/100 g,respectively,and the ratio ofω-6/ω-3 was 4.34︰1.Therefore,the Yi-Shui Giant Salamander oil obtained by this extraction process had good physical and chemical property,and possesses certain nutritional value and health care value.These studies could provide a theoretical basis for the development and utilization of Luoyang Yishui giant salamander oil.
