GC-O-MS结合OAV表征苔青香料关键香气化合物 被引量:6

摘要 为表征苔青香料关键香气化合物,利用GC-O-MS、OAV结合感官评价进行分析。GC-O-MS分析表明,树苔净油和橡苔浸膏分别含有105种和94种挥发性成分,树苔净油和橡苔浸膏分别含有41种和33种香气活性成分。OAV分析表明,树苔净油含有21种关键香气化合物,包括异戊酸乙酯、苔黑酚单甲醚和β-苔黑酚羧酸甲酯等。橡苔浸膏含有20种关键香气化合物,包括芳樟醇、β-苔黑酚羧酸甲酯和β-紫罗酮等。感官评价表明,树苔净油具有较强的青香和甜香,橡苔浸膏有较强的药草香和脂肪香。将β-苔黑酚羧酸甲酯加入果香重组物中,可产生协同作用。 In order to characterize the key aroma components in moss fragrance,GC-O-MS,OAV and sensory evaluation were used for analysis.GC-O-MS analysis showed that treemoss absolute oil and oakmoss concrete contained 105 and 94 volatile components,respectively.Among them,treemoss absolute oil and oakmoss concrete contained 41 and 33 aroma active ingredients,respectively.OAV analysis showed that treemoss absolute oil contained 21 key aroma compounds,including ethyl isovalerate,orcinol monomethyl ether,and methylβ-orcinolcarboxylate,etc.Oakmoss concrete contained 20key aroma compounds,including linalool,β-ionone,and methylβ-orcinolcarboxylate,etc.Sensory evaluation showed that treemoss absolute oil had a strong green and sweet note,and oakmoss concrete had a strong medicinal and fatty note.The methylβ-orcinolcarboxylate was added to the fruity recombination to produce a synergistic effect.
