摘要
近年来,寡糖在食品、农业、医药、环保等领域的应用愈加广泛,以寡糖为基础的食品及药物开发领域逐渐成为生物资源利用的重点发展方向。文章立足于糖胺寡糖、海洋寡糖的研究热点,综述近年来国内外食品开发及生物医学领域壳寡糖、透明质酸寡糖、硫酸软骨素、褐藻胶寡糖、岩藻寡糖相关的研究进展,突出其在营养健康产业方面的作用效果,探讨了寡糖发挥其生理功能的作用机理,为寡糖在功能性食品及药品的研发中提供理论支撑。
In recent years,oligosaccharides have been widely used in food,agriculture,medicine,environmental protection and other fields.The development of food and medicine based on oligosaccharides has gradually become a key development direction for the utilization of biological resources.Based on the research hotspots of glycosamino oligosaccharides and marine oligosaccharides,this article reviews the recent years of domestic and foreign food development and biomedical fields.Chitooligosaccharides,hyaluronic acid oligosaccharides,chondroitin sulfate,alginic oligosaccharides,and fucooligosaccharides are reviewed.Related research highlights its progress in the nutrition and health industry,and explores the mechanism of oligosaccharides exerting their physiological functions,providing references for the in-depth exploration of oligosaccharides in the research and development of functional foods.
