食品专业酸乳生产虚拟仿真实习的实践探索 被引量:2

Exploration of Virtual Simulation of Yoghurt Production Practice for Food Science Specialty

摘要 企业实习是食品类专业应用型人才培养重要的环节,但受到成本、安全、时间与空间等因素的限制,学生往往体验感不佳,实习的教学效果不理想。为了弥补传统实习方式的局限性,文章以酸乳生产虚拟仿真实习项目为例,以OBE理念为核心,以解决生产一线实际问题的能力培养为重点,探讨虚拟仿真技术在食品科学与工程专业生产实习的应用思路。通过构建仿真实习与企业现场实习相结合方式,采用自主式学习教学法+探索式纠错教学法、真实问题导向教学法(PBL教学法)+项目驱动教学法等以学生为中心的组合式教学模式,切实提高学生解决复杂工程问题的能力。 Enterprise practice was an important part of training applied talents for food science and engineering specialties.However,due to the limitation of cost,safety,time and space,students often had a poor experience,and the teaching effect of practice did not reach the expectation.In order to make up for the limitations of traditional practice methods,the yoghurt production virtual simulation practice project as an example was taken in this paper.The OBE concept as the core and focuses on the ability training of solving practical problems in production line was discussed,and the application of virtual simulation technology was explored in production practice of food science and engineering specialties.In this paper,by constructing simulation practice and enterprise field practice way,the combination of learner-centered mode including autonomous learning teaching method plus exploratory error correction method and real problem based learning method plus project driven teaching was committed to enhance students’ability to solve complex engineering problems.
