摘要 随着高校后勤现代化水平不断提高,高校食堂供餐保障趋于系统化、集约化。米饭生产线的应用提升了高校食堂米饭供应的标准化水平,也提高了食堂供餐的效率,同时对质量安全的保障提出了更高的要求。本文对高校食堂米饭生产线质量安全管理中的关键控制点进行分析,阐述HACCP体系在高校食堂米饭生产线质量管理中的应用。通过对米饭生产加工过程中的危害分析,确定原材料验收、去除包装倒入米库、炊饭、洗锅和保温分装5个环节作为米饭生产线关键控制点,并提出了相应的预防措施,提升了米饭生产线的质量安全,为下一步研究提供参考。 With the continuous improvement of the level of logistics modernization in colleges and universities,the food supply guarantee in college canteens tends to be systematic and intensive.The application of rice production line not only improves the standardization level of rice supply in university canteens,but also improves the efficiency of canteen food supply,and puts forward higher requirements for the guarantee of quality and safety.This paper analyzes the key control points in the quality and safety management of rice production line in university canteen,and expounds the application of HACCP system in the quality management of rice production line in university canteen.Through the hazard analysis in the process of rice production and processing,the five links of raw material acceptance,removing packaging and pouring into the rice warehouse,steaming rice,washing pot and thermal insulation sub packaging are determined as the critical control points of rice production line,and the corresponding preventive measures are put forward to improve the quality and safety of rice production line and provide reference for further research.
