甜瓜纸片加工工艺初探

摘要 研究品种、采收期、可溶性固形物含量、干燥方式、干燥温差等因素对甜瓜纸片成膜的效果。以不同品种的甜瓜残次果为试材,采用不同可溶性固形物含量后进行制片,测定色差、感官品质等指标变化。结果表明,结合甜瓜的加工特性,采用不同的可溶性固形物含量,经热风干燥和真空冷冻干燥后,甜瓜纸片的总色差值、感官品质变化不同。干制方式、前处理方式对纸片的品质影响较大。热风烘干、前处理水淋方式的浊汁成型的纸片色泽、质地等外观效果好,能较好地保持纸片的品质。 Study the effect of variety,harvest time,soluble solid content,drying method,drying temperature difference and other factors on the film formation of melon paper.Different varieties of muskmelon were used as test materials,and the soluble solid content was used to make slices,and the changes in indicators such as color difference and sensory properties were measured.Combining with the processing characteristics of melon,using different soluble solid content,after hot-air drying and vacuum freeze-drying,the total color difference and sensory properties of melon paper were different.Drying methods and pre-processing methods had a greater impact on the quality of the paper.Hot-air drying and pre-treatment water drenching method of turbid juice formed paper sheets had good appearance effects such as color and texture,and could better maintain the quality of the paper sheets.
