摘要 螺旋藻是一种古老的低等螺旋藻属水生植物,适于高温碱性环境,生长周期短,光合效率高,在世界各地已大规模工业化生产。螺旋藻富含蛋白质、必需脂肪酸、β-胡萝卜素、叶绿素、维生素、螺旋藻多糖和矿物质等,具有抗氧化、抗炎、促进皮肤创伤修复、抗肿瘤、降血糖、降血压和减肥等多种功效。新鲜螺旋藻是营养更丰富全面的超级食品,大量研究表明其作为改善亚健康状态的功能性食品潜力巨大。本文对螺旋藻成分、功效及其应用前景进行了综述。 Spirulina is an ancient low-grade Spirulina aquatic plant,suitable for high temperature and alkaline environment,which has a short growth cycle,high photosynthetic efficiency,and has been industrialized on a large scale all over the world.Spirulina is rich in protein,essential fatty acids,beta-carotene,chlorophyll,vitamins,Spirulina polysaccharides and minerals.It has antioxidant,anti-inflammatory,promoting skin wound repair,antitumor,lowering blood sugar,lowering blood pressure,weight loss and other effects.Fresh Spirulina is a superfood that is more nutritious and comprehensive,and a large number of studies have shown that it has extremely high application value as a functional food for improving sub-health status.In this paper,the composition,efficacy and application prospect of Spirulina were reviewed.
