摘要
目前,我国食品安全问题突出,现有质量监管体系很难覆盖众多的食用农产品、散装食品、餐饮食品以及现场制售食品等,存在一定的食品安全风险隐患。针对该类问题,采用快速检测技术对食品中特定物质或指标进行快速定性或定量检测具有现实社会意义。本文介绍了目前我国发展食品快速检测技术的相关政策,综述了电化学检测法、比色法、生物发光法等检测技术在食品安全、常规检测中的研究进展,同时对食品快检技术的未来发展提出了展望。
At present,the food safety problems are prominent in China,and the existing quality supervision system is difficult to cover a large number of edible agricultural products,bulk food,catering food,and on-site food production,which might occur certain hidden food safety risks.In response to this type of problems,the rapid qualitative and quantitative detection of specific substances or indicators in food by rapid detection technology has practical and social significance.This paper introduces the relevant policies for the development of rapid food detection technology,summarizes the research progress of electrochemical detection,colorimetry,bioluminescence and other detection technologies in food safety and routine detection,and puts forward the prospects for the future development of food rapid detection technology.
