摘要
为剖析大曲清香型白酒的香气组分特征,采用顶空固相微萃取联合全二维气相色谱-飞行时间质谱(HS-SPME-GC×GC-TOF-MS)技术分析大曲清香型白酒的挥发性香气组分。结果表明,采用该技术在大曲清香型白酒中共检测到可信度较高的挥发性化合物251种,其中包括56种酯类、54种醇类、38种酸类、30种醛酮缩醛类、6种含硫化合物、6种含氮化合物、21种呋喃类、20种芳香族类及20种其他类型化合物。大曲清香型白酒中鉴定出多种特殊挥发性香气组分,如乙酸糠醛、2-戊基-呋喃、苯并呋喃、苯乙酸乙酯等,尤其是苯甲酸乙酯、苯乙酸乙酯、苯丙酸乙酯等芳香族化合物,可能对大曲清香型白酒的香气起到重要作用。该研究为大曲清香型白酒的香气组分分析与感官特征评价提供依据。
In order to analyze the characteristics of aroma components in Daqu Qingxiang Baijiu,the technology of headspace solidphase microextraction combined with comprehensive two-dimensional gas chromatography/time-of-flight mass spectrometry(HSSPME-GC×GC-TOF-MS)was used to analyze the volatile aroma components in Daqu Qingxiang Baijiu.A total of 251 volatile compounds with high reliability were detected in Daqu Qingxiang Baijiu,including 56 esters,54 alcohols,38 acids,30 aldehydes and acetals,6 sulfur compounds,6 nitrogen compounds,21 furans,20 aromatics and 20 other compounds.A variety of special volatile aroma components were identified in Daqu Qingxiang Baijiu,including furfural acetate,2-pentyl-furan,benzofuran,ethyl phenylacetate,etc.In particular,aromatic compounds such as ethyl benzoate,ethyl phenylacetate and ethyl phenylpropionate might play an important role in the aroma structure of Daqu Qingxiang Baijiu.The research has provided a basis for the analysis of aroma components and evaluation of sensory characteristics of Daqu Qingxiang Baijiu.
