摘要
对白云边酒酿造酒醅中分离得到的不同种属的酵母菌进行发酵性能比较,从中筛选一株耐温性好、产酒力强、产正丙醇低的酵母Schizosaccharomyces pombe Scc7。与S.pombe标准菌株1056相比,Scc7在高粱糖化液中发酵酒精度提高了8.7%,正丙醇含量降低了9.9%,乙酸乙酯含量提高了22.2%,并产生3-羟基丁酮。以麸皮为培养基发酵制备Scc7菌剂模拟固态白酒发酵后发现,与储存4个月的大曲相比,将Scc7菌剂以30%比例同1个月大曲混合发酵可使酒精度提高20.8%,正丙醇降低57.78%。本研究表明,Scc7制备的功能菌剂在白酒酿造中具有良好的应用前景。
The fermentation performance of different yeast strains isolated from the fermented grains in Baiyunbian Distillery was compared,and a Schizosaccharomyces pombe strain Scc7 with high temperature tolerance,high liquor yield and low n-propanol yield was selected.Compared with the standard S.pombe strain 1056,the alcohol content of Scc7 fermented in sorghum saccharification liquid increased by 8.7%,and the content of n-propanol decreased by 9.9%.In addition,the content of ethyl acetate increased by 22.2%,and 3-hydroxybutanone was produced.The Scc7 inoculant was prepared by using bran as the culture medium,and it was used in the simulated fermentation of Baijiu.It was found that,compared with the common Daqu stored for 4 months,the mixture of Scc7 inoculant and Daqu stored for 1 month could increase the alcohol content by 20.8%,and reduce the content of n-propanol by 57.78%.The study shows that the functional inoculant of Scc7 has good application prospect in Baijiu production.
