摘要
采用阳离子树脂对莫高庄园黑比诺、蛇龙珠、混酿干红3种干红分别进行增酸处理,以处理前的酒样作为对照。考察阳离子树脂处理前后基本理化指标、色度、金属离子和感官特征的变化。研究表明,阳离子树脂处理不同品种葡萄酒均能使总酸含量明显增加、色度显著上升(P<0.01),pH值、酒精度、干浸出物、K^(+)、Ca^(2+)浓度显著降低(P<0.01),处理后的葡萄酒感官优于对照。研究证明,阳离子树脂交换技术可以有效改善因低酸引起的干红葡萄酒品质缺陷,能减轻葡萄酒酒石稳定性处理的难度,对提升河西走廊产区干红葡萄酒品质有一定促进作用。
Cation exchange resin was used to increase the acid of three kinds of dry red wines produced by Mogao Manor(Pinot Noir,Cabernet Gernischt and blended dry red wine),and the wine samples without the treatment were used as the control.The changes of basic physicochemical indexes,chromaticity,metal ions and sensory characteristics after the treatment were investigated.The results showed that the treatment significantly increased the total acid content of different kinds of wine,significantly increased the chromaticity(P<0.01),and significantly reduced the pH value,alcohol content,dry extract,K^(+) and Ca^(2+) concentration(P<0.01).The sensory quality of the treated wines was better than that of the control.This study has proved that the cation exchange resin can effectively remove the quality defects of the dry red wine caused by low acid,reduce the difficulty of wine tartar stabilization treatment,and improve the quality of dry red wine from Hexi Corridor.
