摘要
近红外光谱技术以其即时在线监测的特点而在多个领域广泛应用,近年来在葡萄酒酿造定性和定量方面的研究已渗透到各个工艺细节的控制中。本文对近红外光谱分析技术作了简单介绍,系统阐述了国内外近红外光谱技术在酿酒葡萄、葡萄酒发酵过程、成品葡萄酒质量鉴别等方面的研究进展,总结了目前葡萄酒品质分析的主要问题及发展方向。
With its unique advantage of real-time online monitoring,near infrared spectroscopy has been widely used in many fields.In recent years,qualitative and quantitative analysis have been applied in every production process of wine.In this paper,near infrared spectroscopy(NIRS)is briefly introduced,and the research progress in the application of NIRS in the quality identification of wine grapes,wine fermentation process and finished wine is systematically described.The main problems and development direction of wine quality analysis are summarized.
