摘要 辣椒是众多维生素的重要来源,包括维生素A、E、C和类胡萝卜素,以及酚类化合物如辣椒素、木犀草素和乌皮素。所有这些化合物都与其抗氧化活性和其他生物活性相关。本文通过对辣椒形态、成分、生物活性物质的功能进行逐一解析,明确辣椒的生物活性物质,并综述辣椒素在抗菌、杀菌、抗氧化、抗老等方面的作用,为其在畜禽养殖中作为饲料添加剂提供重要参考。 Pepper is a great source of a number of vitamins, including vitamins A, E and C, carotenoids, and phenolic compounds such as capsaicin, luteolin and opicin. All of these compounds are associated with their antioxidant and other biological activities. In this paper, the morphology, components and functions of pepper bioactive substances were analyzed one by ones. The antibacterial, anti-oxidation, anti-inflammation of capsaicin were summarized. These provides important reference for its use as feed additives in livestock and poultry breeding.
