摘要 为扩大壳聚糖、丝素蛋白共混材料的应用范围,充分发挥其优势,文章以壳聚糖、丝素蛋白为基材制备可食膜,探讨壳聚糖、丝素蛋白、甘油、吐温20的质量分数对壳聚糖-丝素蛋白可食性膜机械性能、水蒸气透过系数、氧气透过率和水溶性的影响,从而提高可食膜的各项理化性能,为开发新型壳聚糖-丝素蛋白可食膜提供实验基础。 In order to expand the application range of chitosan and silk fibroin blends and give full play to their advantages,edible films were prepared with chitosan and silk fibroin as substrates.The effects of the mass fractions of chitosan,silk fibroin,glycerol and Tween 20 on the mechanical properties,water vapor transmission coefficient,oxygen transmission rate and water solubility of chitosan silk fibroin edible films were discussed to improve the physical and chemical properties of edible films.It provides an experimental basis for the development of new chitosan silk fibroin edible films.
