摘要
鼠伤寒沙门氏菌是一种普遍的人畜共患致病菌,独特的感染机制使其发病率高居沙门氏菌感染之首,食入一定量该病原菌污染的食物和水可引起人和动物的胃肠道疾病。因此,食品中鼠伤寒沙门氏菌的快速、准确检测对预防食品污染和食源性疾病爆发十分重要。本文主要阐述了鼠伤寒沙门氏菌逃避先天免疫机制以及鼠伤寒沙门氏菌与宿主之间的关系,并对目前鼠伤寒沙门氏菌检测技术进行综述。
Salmonella typhimurium is an important zoonotic pathogen.Food and water contaminated by the pathogen often cause gastrointestinal diseases in humans and animals,and its unique infection mechanism makes it the highest incidence of salmonella infections.Therefore,the rapid and accurate detection of Salmonella typhimurium in food is very important to prevent food contamination and food-borne disease outbreaks.In this article,the mechanism of Salmonella typhimurium evading innate immunity and the relationship between Salmonella typhimurium and its host were mainly expounded and the current detection techniques for Salmonella typhimurium were outlined.
